Now I'm totally going down a rabbit hole filled with lard. A question on the amazon page for that stuff said "do you sell leaf lard?" and I was all wha? Is that vegetarian lard? NO.
Friend of mine makes her own leaf lard. And a helluva lotta pies.
Many old-fashioned recipes require cooking with lard. Despite its demonized reputation, lard is actually better for your health than fake, processed vegetable oils. Enjoy its flavor and texture by cooking your way through the âLardâ cookbook from âGritâ magazine.
Some meats and definitely pastries if you're doing a pot pie for example... are better with lard. It's very difficult though to find lard that's not partially hydrogenated/fake/processed.*** I know we can't get it here unless we render it ourselves. Which we do not do.
Answer:5-12% hydrogenated lard. We don't give exact percentages due to this being a proprietary blend. Hydrogenation is a process that will harden the fat. Partially hydrogenated oils are banned in the US, therefore we list hydrogenated lard as a separate ingredient to indicate that our products are fully hydrogenated (which is a process that is not banned, and deemed safe in the US). We harden a portion of the fat in this product because harder fats are preferred for baking pie crusts. see less By South Chicago Packing SELLER on March 8, 2021
They also do a product called All Bake which is beef tallow+hydrogenated beef tallow.
So anyway, I learned something. The cheaper stuff does have more things in it. And you can get 100% nothing-but-lard lard. In a battle of natural fats, lard is probably healthier/lessbad than butter.

I've heard that about Fresno before -from friends and from shows on Food Network or channels like that. I haven't been to that part of CA, been north of there and south of there.
No one goes to Fresno on purpose unless there's family there. Small ag town in the middle of nowhere but it has as many people as Wyoming.
Here's Charlie posing with the trophy the winners took home... we stopped in their restaurant the next day for breakfast. Wasn't as glorious but still lardy.
lardy?
Is it better to cook with lard?

Ah, this doesn't bode well for the next Taco Truck Throwdown. We were at it the year before this (Charlie got the T-shirt!)... the street food in Fresno is the best anywhere. And not just the tacos.

Mr Berkowitz, who graduated from Harvard Law School in 2016, has no foreign policy experience. He joined the Trump campaign in 2016 and has since served as Mr Kushner’s right-hand-man in the administration.
A 2017 Business Insider profile of Mr Berkowitz quoted former White House spokeswoman Hope Hicks as saying his main duties were “daily logistics like getting coffee and coordinating meetings.”
So, as eminently qualified as Kushner himself? And his FIL? Excellent!
