It was Saturday night, but I tried out two new-to-me recipes. Baked scallops, and creamy mushroom, spinach orzo. Both with lots o' Parmesan! Yummy! And my trusty taster brought a nice bottle of Sauvignon Blanc.
Sounds awesome but wait a minute. That's a lot of scallops! Those things are expensive!
I baked Brussels sprouts and green beans and cauliflower with olive oil salt and pepper at 425 for 25 minutes. It was pretty good!

My New Year's treat/experiment: reverse seared filet mignon. It took longer than I expected (due to it being so dang thick) and so was a tad more rare than I would have liked, but on the whole I think I did okay! And a baked tater, salad and a glass of red. I only ate half of it, so when I re-heat it, it will become less rare.
Justine posted on the worldwide web that she had a health startle, so people brought food... my own dad made up a spatchcocked chicken (he's really fond of those), that he slow-roasted until it was falling off the bone. Last night a coworker brought over a casserole, known in some parts as "hot dish," the thing with burger and cream of mushroom soup and tater tots and cheese. We attempted to heat it up for last night but as it came straight from the freezer, it heated for 90 minutes and was still icy in the middle. Just then, another friend brought over some BBQ beef and buns so we ate sandwiches last night and saved the hot dish for tonight but then Dad's chicken came over and it was a feast. Plus salad; I'm all about the healthy eating, y'know. So, hot dish: It's as awful as it sounds so I only ate two helpings. Oh, man it's good but every bite I'm going "shouldn't like this. shouldn't eat this." And ate some more. Oy. So full.
Anything with tater-tits can't be all bad, in a comfort sense, anyway.
My first meal of solid food in the 8 weeks since I finally had the rest of my teeth yanked. I have finally healed enough to try to eat something more solid than peanut butter. It was rotisserie chicken and well done but not mushy broccoli. Been living on coffee, Boost and creamy peanut butter mostly with a couple of extremely ripe bananas and a couple of very ripe Bartlett pears, yum. It was hard at first accepting creamy PB having been a life long crunchy PB guy. I've also lost 40 lbs in the past three months and am down to 175 lbs, which is what I weighed in high school and where I should be anyway. Amazing when I try and pick up a 40 lb bag of kitty litter to put that into perspective ...
I'm going to keep up with the Boost as I have come to actually like it. Fortunately having to wear a mask at work has kept the recovery process manageable when it came to working with the public.
I'm actually gaining weight. Must be all the ice cream sandwiches...

You're torturing me, man! I've been on a diet of oatmeal and yogurt since i had most of my teeth pulled. I tried a can of Dennison's chile with a handful of melted cheese and that worked fairly OK. I have to take digestive enzymes to help me process the unchewed pieces. I'm living on supplements. And no sign of new chompers in the near future. If I get new teeth that actually work I'm going on a steak, burgers, tacos and pizza binge. And some salad I guess.

snip the ends off a handful of string beans. Shallow pan. Teeny bit of olive oil. Pinch of salt and pepper. Massage it in. 400 degrees for 25 minutes. Sprinkle soy sauce. Yum it up...
