2 ceiling fixtures (lots of options to choose from!) Get ones that have a space between the fixture and the ceiling for better light dispersement. These would be warm, but not really great lighting for the room.
Cool hanging lights This would give an interesting look, but there's not enough dispersement (am I spelling that wrong?)
I think track lighting will be wonderful in your kitchen! You're limited by budget... but there are lots of lovely options for the lights. You point the lights at the cabinets, and it will be effective and warm. Be sure to NOT get halogen (makes shadows)... get lights that can take regular bulbs... you can use florescents.
My fave! This one is at Home Depot. had little crystal lights, and takes regular bulbs.
Now... we just need to get someone to help you install them! Wish I lived closer! It will be totally worth it... like you said, it's probably the most used room in the house, and this will give it a really new, appealing feeling.

Looked at this light at Home Depot today ($29). Hmmm, a couple of them in a row (and shortened)? They also had the dressed up "shop light" florescent like I posted in my original post ...

Agreed. We're installing LED pool lights now that put out a brighter, whiter (is that a word?) light and consume less than 10% of the power of the lights they replace. They're triple the price of a comparable incandescent, but have a 10,000 hour expected life. As a bonus, they are also color-changing.

Having just put in brushed nickel faucet and cabinet hardware (and my stainless fridge and stove), I'm thinking about something metallic.
And HS, I don't know anything about LED lights. Do they provide much light?

Might cost you some but this is the way I would go.

What do you think about the Italian glass pendant lights? I think they are really pretty.
very nice. All the good RPeeps will walk you through repairing the ceiling after taking down the old light!
