The food geeks have figured out that steel is better than stone for the baking surface because it isn't about the thermal mass but about the thermal conductivity to get a good base. I'm suspicious you wouldn't get enough radiant heat from above due to the thin steel. It wouldn't meet the requirements for the “Verace Pizza Napoletana” designation although it does meet the temperature requirement. Yes Scott, you do need to get screaming hot. I know of people who have circumvented the safety lock on their electric ovens and cook pizza on the "clean" setting. My plan is to put a tray of charcoal on bricks above the cooking surface of my gas grill so I can heat from above and below. Currently, I build the pizza on a dry cast iron fry pan on the stove and then shove it under the broiler to finish. I can cook a pizza in just under 4 minutes, which is too long according to the anal-retentive Italian standard 60-90 seconds but it still tastes pretty good when I make the effort.

Seems pretty random. Ah, 500C.
I'm not sure pizza requires an incinerator tho. I have tried making pizza on the grill before and it was a mess, but the last time, it came out great. So I'll probably try to refine that. Well something just shy of incinerate. I use a pizza stone on our charcoal weber grill with a spacer that I built to get some extra circulation in the dome. It works really good and I've measured 550+ in there. I do think within a range, hotter is better.

There's a 19 year old Harris' Hawk who needs a good home. I wish I could afford to take him as a companion for Tessy since we lost India. I just don't have enough in the freezer for Tessy let alone another bird. Dang. Oh well.

If it's just booze & t'backy they'll have more time on their hands to hunt us down like the dogs we are.
With all the budget cuts lately they probably have more than can handle already and are spread too thin to be much of a threat. Remember these are government workers we're talking about.

Hmm, didn't know that: "The goal of ATF's Alcohol and Tobacco Enforcement Programs in order to target, identify, and dismantle criminal enterprises with ties to violent crime, that traffic illicit liquor or contraband tobacco in interstate commerce; seize and deny their access to assets and funds; and prevent their encroachment into the legitimate alcohol or tobacco industry. As of January 24, 2003, The U.S. Department of the Treasury, Alcohol and Tobacco Tax & Trade Bureau (TTB), is responsible for all inquiries in regards to the manufacture, wholesale and importation of alcohol and tobacco, regulating the alcohol and tobacco industries and Special Occupational Tax (SOT) and the collection of Alcohol, Tobacco, Firearms and Ammunition Excise Taxes imposed on manufactures and importers of these products."

You can run it through a filter though. That is legal and does work to remove impurities as well. But the time, energy and materials involved aren't really worth it unless it's a hobby. Just buy the good stuff.
that's my problem i just go out and buy it and by it i mean scotch, rum and vodka on occasion
