If I remember my O-level biology it's something to do with bile or somesuch. Which is probably why you don't see it nestled next to the kidneys, livers and hearts in the good butchers.

Bet you a pound to a penny we all eat it in cheap burgers, sausages and pies though.

...ew. I hope you don't say such things in front of your lovely bride. Now, Bev, on the other hand...

Dunno, it was mailed in December and that's all I know. Still, it got here "dreckly", as they say in Kernow.

I wasn't there when the parcel arrived, we were out first time and asked for it to be re-directed to the pub. When the postie handed it to Bev The Scary Lancastrian Waitress he was consumed by nosiness. "That's from America that is. What d'ye think it is, having come from America and all?"

Being BTSLW, she sent him on his way with a black pudding flea in his ear. And then spent a long time casting meaningful looks at the package herself, ripe with possibilities as it was.

My parcel arrived today! edit: reading this post through a second time, it becomes evident that I was woken by some drunk gits prank ringing the doorbell at about 4:15 this morning, and the I use the word 'lovely' too much.   Forgive my lack of sense
