American sweet corn is a revelation deserving of the worship it gets. Here, we usually get shucked shrink-wrapped packs where you might as well eat the styrofoam tray. Even at the farmers' market it is often several days old.
And I get the corn from a lovely, local farm stand. This ear was massive! So good.

Made a cauliflower crust pizza from scratch last night.
First step in that was figuring out cauliflower ricing (get rid of the stem/leaves and pulse it in a food processor). Take the cauliflower rice, put it in a towel and squeeze the liquid out of it, then bake it @ 350 on a sheet pan until dry.
Now I can stop buying that frozen stuff at Costco (which is, truthfully, quite convenient).

What I think I like about it is that, just for that time, there is no question about what I should be doing. There’s a purpose, a goal, and a reward for sticking to it.
last two nights have a little steak and plate of veggies
tonight mustard, kraut and side of hot dog w/spinach salad
Crazy cooped up chef has several different leftovers available, but tonight may sling together some sort of chicken/mushroom/saucy thing, with a veggie plate.
Or it could be carne adovada with homemade corn tortillas.
Or it could be bbq pulled pork with something something.
Or I could grab the chuck roast and whip up some Ethiopian tibs.

I say sling whatever is easiest for you.
I'm letting someone else do the cooking tonight. Pretty sure we're having fish and chips with a little salad on the side.
