I think you can let it cool in the car if you make sure it doesn't slide around much.

A dumb question... I'm taking an apple pie (Mrs Smith deep dish apple) to firends who invited me to Thanksgiving.. The trip is over an hour. The pie instructions say to cool for two hours.
