Sure, it can cool in the car, just put it in something that will keep it from banging around in the car. This is random, but do you have a hat box? That would work. Or another dish that is bigger than the pie.

It'll be fine. Might be a little bit liquidy when you first take it out of the oven but by the time you get it loaded up it'll have started to set. I would carry it on the floor of the car, not the seat, though. I guess that's obvious tho. Or put it in a box that you can then get a seatbelt around.
